Chili con Carne (my style)


This is the easiest and quickest food in the world, and it was my first time. OMG, what I've been missing...

1 Onion
2 Cloves of Garlic
2 Fresh Chili Peppers
100 g Bacon
3 Small Tomatoes
2 tbsp. tomato pulp
500 g Minced Meat (I used a mix of pork and beef)
1 dl White Wine
800 g Canned Beans (I used black)
Oil, Salt, Black Pepper, Cumin and Paprika a.n.



Heat the oil in a pan and fry the chopped onion and garlic until become translucents. Add the chilies finely chopped, then the bacon, until its fat is released. Peal, chop and add the tomatoes. Let it cooks.
Add the meat and let it fry. Refresh with the wine and tomato pulp. Reduce the heat and let the meat cooks.
Join the beans and its water and all the spices. In medium heat, simmer until sauce thickens and volume is reduced a bit, to gain all the flavour you can get. Rectify the spices.

If you wish you may serve with white rice and spinkle with chopped parsley.

Carrot Fritters


These delicious carrot balls are a typical Portuguese Christmas desert. Every year we eat a dozen balls of these. Most of them are made with pumpkin, but I rather with carrots, because of their smoothiest inside.

500g Carrots
200g Plain Flour
1 Egg
1/2 Orange Juice
1dl Grape-Marc Spirit
1ts Baking Powder

Boil the carrots in water. Drain the water and mash the carrots with a fork. Add the ingredients in their order while stirring. Be sure of the dough consistency, it should be able to form soft balls with two tablespoons. If not, you may add more flour.
Fry the balls in oil at 180ºC of temperature, until get dark orange color.
Set aside in a plate with kitchen paper and then, roll them over in a mix of sugar and cinnamon.
