Carrot Fritters


These delicious carrot balls are a typical Portuguese Christmas desert. Every year we eat a dozen balls of these. Most of them are made with pumpkin, but I rather with carrots, because of their smoothiest inside.

500g Carrots
200g Plain Flour
1 Egg
1/2 Orange Juice
1dl Grape-Marc Spirit
1ts Baking Powder

Boil the carrots in water. Drain the water and mash the carrots with a fork. Add the ingredients in their order while stirring. Be sure of the dough consistency, it should be able to form soft balls with two tablespoons. If not, you may add more flour.
Fry the balls in oil at 180ºC of temperature, until get dark orange color.
Set aside in a plate with kitchen paper and then, roll them over in a mix of sugar and cinnamon.
